Snow Day!

Happy Saturday morning to you all! And, Happy Birthday to my sweet husband!

This is what we woke up to this morning. I know it's not much snow, but it is very exciting for all of us here in the Queen City, unfortunately this isn't a common sight. We are looking forward to lacing up our snow boots, enjoying some hot chocolate and celebrating Brian's 27th bday. I hope you have snow where you are!

Soup on Sunday

The past couple of weeks I have found myself cooking a good pot of soup on Sundays for supper. A craving for soup comes with the winter weather in our house, maybe yours too! To me, there is just something about a good bowl of soup that goes with a relaxing Sunday evening. I have a new recipe for today, compliments of my moms good friend Carol. This is simmering in my kitchen right now and tastes delicious!

Lemon-Chicken Soup
6 skin-on, bone in chicken breasts
2 large onions, chopped
5 celery ribs, chopped
2 garlic cloves, minced
1 tsp. olive oil
1 (1 lb.) package carrots, sliced
4 tsp. lemon zest
2 bay leaves
2 tsp. salt
1/2 cup loosely packed fresh flat-leaf parsley leaves

Toppings: cooked barley, cooked green beans or lemon slices.

1. Bring chicken and water to cover to a boil in a large pot over medium-high heat; reduce heat to low and simmer 1 hour.
2. Remove chicken, reserving liquid, and let cool for 15 minutes. Shred chicken.
3. Pour reserved cooking liquid through a wire-mesh strainer into a bowl, discarding solids; wipe pot clean. Add water to cooking liquid to equal 10 cups.
4. Saute onion, celery and garlic in hot oil over medium-high heat for about 5-6 minutes or until tender. Add shredded chicken, cooking liquid, carrots and next 3 ingredients. Cover, reduce heat to medium and cook 20 minutes or until carrots are tender. Add parsley. Serve with desired toppings.

Scratchy Throat?

When the seasons change and especially when the weather gets cold, it seems throat irritations are inevitable. I myself have had a "throat tickle" for weeks. It is aggravating and keeps me up at night. I recently discovered Sleepytime Tea at the grocery store and I'm in love. Have any of you tried it? I make a cup before going to bed and it instantly soothes my throat and relaxes me for a good night sleep. The ginger, lemongrass and spearmint aromas are wonderfully calming.

"Workin' 9 to 5"...

I'm officially back to work. I started this past Thursday. It was nice having a two day week to ease into the routine. I was quickly reminded how it feels to be "working for the weekend"! I am so blessed to have found a great job during these economic times. Even though life might be a little hectic now getting back to work full time, it is my goal to continue to MAKE TIME for:

a "Brian" Morrison Making...

Although Stella spends most of her time inside with us, we thought it would be nice for her to have a doghouse to lounge in when she is outdoors. I'm so thankful to have a handyman husband! Brian built this house from scratch and finished it up this afternoon. I think Stella's going to love it :)
